Zucchini Crazy

The zukes are growing like mad here in Indiana, despite the worst drought we've had in ages.  Here are a couple good ideas for those of you that have more zukes than you know what to do with:


 Zucchini mask
Mix 2 tablespoons of finely grated zucchini with 1 tablespoon oatmeal. Add milk until you get the desired consistency. It should be thick but spreadable. This is an excellent mask for oily skin, as the mask will remove excess skin oils and impurities.
As this mask dries, (about 20 min), your skin will tingle.  Rinse with cool water and enjoy your fabulously soothed skin.


Zucchini Patties

Adapted from Shape Magazine

Makes Approx. 18 Patties

Ingredients:
1 large zucchini, grated and rung out
1 egg
1 c. bread crumbs
salt & pepper to taste
garlic powder
.5 c. parmesan cheese, grated

Mix all ingredients thoroughly and shape into 2" patties.  Heat a large skillet sprayed with Pam.  Cook patties till golden brown. 

Look at this baby straight from the garden, almost as big as the US! 

                                     

The shredded zuke must be rung out.   To do this, I wrapped mine in a paper towel and squeezed.                        


                                    

                                          Next comes the mixing it all up.



Cook em up.
                                                                   



These are really good served with a little ranch dressing (fat free of course).  :)
