Tropical Grilled Supper

 
Fresh strawberries are still inexpensive and delicious!  Is it just me or do the stores up North have slim pickings on berries by this time of year?    


                    My breakfast this morning was shredded wheat and of course, strawberries.


For lunch I had a small glass of coconut water, on the rocks,                    
                                               
                                          
along with fresh Peach Salsa on bread.     
                                    
                                     
To make the salsa, I just chopped a couple of peaches and splashed them with lemon juice, plus a dash of salt. Then minced cilantro, jalapeno pepper, and green onion in the food processor, and mixed it all together with the peaches.  The result is a very fresh, and spicy taste with a bit of sweet.

 

Lunch was so yum, that I decided to go all tropical for supper too. I made a marinade for the chicken from mixing pineapple juice, a clove of garlic, soy sauce, and a bit of leftover raspberry salad dressing.  The berries turned the chicken a cool red and the flavor was awesome.  Since Glenn does not do fruit, his chicken was sparred the marinade.  He grilled this chicken to perfection,
                                     


                                          along with fresh pineapple,
                                     

                                         
                                          and fresh sourdough bread.
 
 
      The chicken was placed on a lettuce salad, topped with sweet vidella onion, and peach salsa with a huge side of grilled pineapple.  Delicious!                    


                 The accompanying beverage to our tropical supper-- what else, pina coladas!


 
 Oh, these were sooo good, the kids all had seconds.  Noooo, there isn't any alcohol involved.  In fact, it's nothing more than frozen banana, fresh pineapple, and 100% coconut water blended together for a totally awesome, healthy, complimentary beverage.
 
 
This tropical supper was a great way to end what just might be one of the last hot days remaining in the year.  Next to come:  Bring on the Fall.   :)
